Zahtar
The zahtar is a mixture of spice S of the the Middle East, used especially to soak the Pain, pita , with oil of Olive. It can also be used with cookings of white meats, marinades or grills of Poisson S.
Zahatar means Thym literally, from where its thyme name of Alep.
Its composition includes/understands thyme (or more precisely a variety of Hysope), Sésame, Sumac, Marjolaine and, possibly, Green anise, Coriandre and Cumin. As for all mixtures, the proportions are variable from one grocer to another.
