Zédoaire

The zédoaire (Curcuma zedoaria) is a long-lived rhizomateuse herbaceous plant of the family of the Zingibéracées originating in the India and Indonesia.

Description

The zédoaire pushes in the tropical and subtropical rainy forests. Its Fleur S scented is yellow with Bractée S reds and green. The Rhizome tuberous and is very ramified. The Feuille S are large, alternate and whole and the drawn up air stems can reach 1 m in height.

Use

The edible rhizome of the zédoaire is of orange color sharp inside and its odor points out that of the mango. But its savor resembles the Gingembre rather, with a very bitter after-taste. In Indonesia, one reduces it out of powder and one uses it like spice in the preparation of the Curry, while in India, one consumes it rather fresh or marinaded. The young sheets are also edible and have a citronné taste.

This spice was introduced in Europe by the Arab S towards the Life century, but its use is now very rare in occident, where it was replaced by the Gingembre.

The zédoaire is also used like medicinal Plante in some Pharmacopée S traditional Eastern. It is famous to help with the Digestion, to relieve the Colique S and to purify the Sang.
