Yatsuhashi
The yatsuhashi (八橋 or 八ツ橋) is a Gâteau Japan board. It is the speciality of Kyōto. The name of yatshuhashi is drawn from that of a player of Koto, Yatsuhashi Kengyō (八橋検校).
There exist two types of yatsuhashi, the yatsuhashi cooked (焼き八橋) and the yatsuhashi with the vapor (生八橋 literally, yatsuhashi believed).
The cooked yatsuhashi is made with paste of Riz, powder of grooves and of the Sucre. It with the form of koto.
One uses liquid cinnamon instead of the powder for the yatsuhashi with the vapor. It often contains red paste of Haricot (Anko) inside. But today some of them contain Chocolat, Confiture even of the cream.
