The wine of Seyssel is a dry of Savoy, quiet white Wine or sparkling, which profits from a communal AOC since February 11th, 1942 (older AOC for a wine of Savoy). It accounts for approximately 5% of the production of the Vins of Savoy with approximately 2500 hectolitres annual.
The vineyard of approximately 60 ha is located on the communes of Seyssel (Ain), Seyssel (Haute-Savoie) and Corbonod. This vineyard would go back to the 11th century.
The Cépage S white are: dogfish of Savoy (also called Highness), chasselas and serrated roller.
Sparkling wine (also called " Royal Seyssel") is elaborate with these the last two type of vines, as well as a minimum of 10% of highness. This sparkling wine undergoes the one second fermentation out of bottle.
The wines white of Seyssel release some flavors of violet, even of iris. This would be related to the fact that a very aromatic variety of iris used by the perfumers of Fatty was cultivated formerly on this vineyard.
This wine is kept from 3 to 5 years, the sparkling wine can be tasted as soon as produced.
Ideal temperature to appreciate it: 8 with 10°
