White Beer
The white beers are Bière S brewed with a strong proportion of wheat not malted. There exist mainly 2 beer " traditions; blanche": in Belgium and Bavaria (Weizenbier).
The Belgians are often light beers, titrating approximately 5 % of alcohol, with the Taste acid and refreshing. One always associates to them spice S like the Coriandre or of the barks of bitter oranges.
The Bavarian ones contain only malt and hop; various levels of torrefaction of malt differentiate the " categories; Hell" (clear) and " Dunkel" (sinks). The " hell" filtered " is called; Kristal".

History
In Belgium the area of origin of white is Leuwen and its neighborhoods, which had been made a name concerning the production of a rather drinkable beer about the 14th century. In the small town of Hoegaarden of the monks were at the origin of the use of Coriandre and barks of orange Curaçao to refine beer. At the time this area belonged to the Netherlands and they benefitted from their good contacts with the Dutch merchants who dominated the market of the spice S at the time. After disappearhaving almost disappeared from the market in the Fifties, started again by Pierre Celis starting from 1966 and having been a success striking down in the student's medium in Belgium with the beginning of the year 1980, it is produced today in many countries such as Belgium, the Netherlands, Luxembourg, France, Canada and the United States.
About the middle of the 19th century G. Lacambre, engineer and old directing of brewery with Leuven scientifically analyzed the various methods of production from white and tried to improve them. These studies are described in its complete Traité of the manufacture of beers and the distillation of the grains, potatoes, wines, beets, molasses, etc published in 1851. This work was also used as reference to AD. Frentz in 1872 for its Book of pocket of the white beer manufacturer published in Brussels by printing works Laurent brothers.
Mixing
They are beers of high fermentation and not filtered containing wheat not malted, which gives them this milky aspect which is at the origin of their name. Nowadays, the Levure used is the Saccharomyces cerevisiae.The name of “white” often involves a confusion due in the phonetic vicinity of the words German S Weizen (wheat) and Weiß (white). It may be well that the Moyen-âge the methods of manufacture of two beers strongly resembled each other. However nowadays we are opposite two types of very different beers. The beers of German origin are always brewed containing wheat malt as well as hop, but they never contain other not malted cereal spices nor. The Weizenbier or Weissbier (Bavarian term for Weizenbier ) can thus be regarded as another kind of beer, just like for example Gueuzes which is turbid and contains they also wheat, but for that are not called “white”.
