Waste of Normandy
The trowel is a very old culinary speciality originating in Normandy. The Dictionarie off the French and English Tongue of Randle Cotgrave of 1611 presents the “ gasche ” like “a cake of Normandy”.
It is about a Brioche obtained starting from Farine mixed in half of its weight in Lait and the quarter of its weight in Beurre soft with Levure of baker, eggs and salt, worked in form of Pain, engraved and cooked approximately three fifteen minutes to average furnace after having raised only once.
