The vineyard of Saint-Georges-Saint-Émilion is equipped with a Appellation of controlled origin since November 14th, 1936. Only are entitled to the AOC the wines which have collected on the territory of the Saint-Georges-Saint-Émilion hamlet, started from Montagne. 192 hectares of surface planted in vine were asserted in 2005 with a production of 9.333 hl.

Name product exclusively of the red Wine, and so almost all the type of vines of Bordeaux can be used there (Cabernet-sauvignon, frank Cabernet, Merlot, Côt etc), it is the merlot which prevails clearly.

The vineyard of Saint-Georges is in the northern prolongation of Saint-Émilion on Right Bank of the Barbanne and it is included in the vineyard of Mountain. With the vineyards of Lussac-Saint-Émilion, Mountain-Saint-Émilion and Puisseguin-Saint-Émilion, it forms the satellites of the Vignoble of St. Emilion.

The basic output is fixed at 45 hl/ha with a ceiling limits of 20%. Before any enrichment or concentration, musts must contain 187 natural sugar g/l at least. The wine must present after fermentation a minimum alcoholic strength of 11% vol.

Type of vines

Traditionally, the wines of Saint-Georges-Saint-Émilion are wines of assembly of various type of vines, the three principal ones being the merlot, the frank cabernet (or bouchet) and the cabernet sauvignon.

The distribution of type of vines is the following one:

  • the merlot- It is the type of vine more represented (more than 75% of encépagement). It is an early type of vine of second time, he appreciates the fresh and wet character grounds with argillaceous texture. He matures well and brings to the wine of the color, a good alcoholic strength, a good complexity as well as flexibility and roundness in mouth.

  • the frank cabernet - Primarily planted in the Livornese, it represents nearly 20% to encépagement of St. Emilion. Of average precocity, it is used more on the grounds limestones or with texture a little hotter (sands and low registers). It brings to the wine a slightly spiced aromatic smoothness, a freshness and a tannic structure, conferring on the wine a great aptitude of ageing.

  • the cabernet sauvignon - Accounting for approximately 5% of encépagement, it is a late type of vine particularly adapted on the hot and dry ground (sandy gravelo or grounds argilo quite exposed limestones). It brings to the wine spiced, complex notes and a tannic richness favorable to a long and harmonious conservation.

The decree of A.O.C. Saint-Georges-Saint-Émilion also allows the use of two other type of vines: the malbec (or côt) and the Carménère. Only the malbec anecdotiquement is still anecdotiquement used.
