Use

The roots constitute a Légume which is eaten cooked (jumped, gratiné, out of mashed potatoes…) out of flower stand, in accompaniment of meat dishes or to scent Soup S.

It is a vegetable rich in Potassium which occupied a long time a very great place in the supply Europe, but which was somewhat détrôné by the Potato. It is often décrié for its insipidity.
