Jean-Baptiste and Marie Troisgros
Jean-Baptiste Troisgros and his Marie wife, of Burgundian origin , hold the " coffee of the traders " with Chalon-sur-Saône in Burgundy. In 1983 Jean Troisgros dies. The place of the station is renamed " place Jean Troisgros " in its honor. Pierre continues with his Michel son starting from 1984.
Michel and Marie-Pierre Troisgros
Michel was born the April 2nd 1958 with Roanne. He makes the Hotel School of Grenoble between 1974 and 1982 where he meets his future Marie-Pierre wife whereas he is 16 years old. They leave to make the round the world tour to learn the trade at largest, Frédy Girardet with Lausanne, Taillevent with Paris, Michel Guérard with New York and some others with Brussels, San Francisco, London, Tokyo… He marries Marie-Pierre of which he has three children: Marion in 1983, César in 1986 and Léo in 1993.It takes again the Troisgros restaurant of Roanne with his father Pierre Troisgros after the death of his uncle Jean in 1983 then it continues with his Marie-Pierre wife, mistress of hotel and decorator, in a cordial and modern environment of purified design, modernity, Zen, elegance and refinement, good being, intimacy, comfort, calm, of pleasure, by preserving the family spirit and the high level of reputation of the family establishment all while adding with talent their many international assets to it. Their three children are restorers also.
In 2000, Michel Troisgros becomes new the Tsar of the Russian Gastronomie by opening a Troisgros restaurant with Moscow. His/her brother Claude Troisgros holds a Troisgros restaurant with Rio de Janeiro with the Brésil. Anne Marie, the girl of Claude, holds the " Restaurant Gravelier " of Bordeaux.

Anecdote
- In the years 1960, the Troisgros brothers developed one the most famous receipts of the gastronomy: the escalope of Salmon to the Sorrel. This preparation which became traditional was innovative during its introduction. Astonishing thing: this receipt evolved/moved with time and there are many alternatives (the current version is very refined, when one compares it with the version of origin).
