Tramousses
In the pied-noir kitchen, the tramousses (of the Catalan tramús , even direction; Castilian altramuz ) are “cocktail snacks” also called Lupin S (seeds of which they are made up). One serves them like kémia (salted cocktail snacks been useful with aperitif).
Preparation
The dry seeds of lupin are put to soak, are cooked, then marinaded in brine.
