Torulaspora delbrueckii

Torulaspora delbrueckii is a Levure used in the mixing of some Bière S white, in particular of the Bavarian Weizen . It gives to beer a Goût characteristic of phenol.

It is sometimes confused with Lactobacillus delbrueckii , a Bactérie Anaérobie producing Lactic acid .
