To tube uncinatum

The To tube Uncinatum , called truffle of Burgundy or gray truffle of Burgundy , is an edible mushroom Ascomycète (of the Tuber kind). The truffle of Burgundy resembles Tuber aestivum but with an odor and a taste more marked. It is most largely widespread in all Europe and is put in symbiosis with more variety of trees (Chêne S, Noisetier S, Charme S, Hêtre S and pine S). It is also less demanding from the heat point of view and quality of the ground.

Characteristics

  • To tube It Uncinatum is black, its pulpit, with maturity is brown dark. The veins are white and very numerous. One notes with the nose a mushroom odor. In mouth, the taste is variable, quite ripe, with dimensions the slightly bitter one disappears and leaves room to a hazel nut softness.

History

Until the Rebirth, the only truffle which appeared in the table of the Kings de France was that of Burgundy. The taste for truffle of Périgord came at the time of François 1st.

To tube uncinatum came to scent at the XIXe century the mets truffles been useful in the great restaurants from Paris. The production of Truffle of Burgundy in France was of 78 tons in 1889 (including nearly 20 tons in 1869 for only the Haute-Marne). Fallen in the lapse of memory at the beginning of our century, the production is started again since a score of years thanks to a new method of culture of truffle seedlings. From September to January, the truffle dogs seek " To tube uncinatum" , called " princess of Barrois" , " jewels of the bois" or " treasure haut-marnais" , so that the gastronome finds the greedy pleasure of the refined mets.
