The tilsit is a cheese of the Eastern Suisse.

History

In 1893, Hans Wergmüller, originating in Bisseg, emigrates in Prussia after the Franco-German Guerre of 1870. It is established in the town of Tilsit, on the coasts of the the Baltic (today Sovietsk in Russia).

Returned with the country, it introduced there the production of the small grinding stones of Tilsit, by modifying the receipt of origin slightly. Today it is manufactured in three cantons: Thurgovie, Saint-Gall and Zurich.

Specificities

It is a cheese containing cow's milk, soft and aromatic with a natural and wet crust of color brown-red. It is appeared cylindrical as grinding stone, 8 cm thickness, 25 cm diameter and a weight of 4 kg.
