The company Basque the is specialized in the Cookie ery, the Gaufre tte, and the cones for Glace S. the Gomez brothers launched manufacture at the 20th century.

History

At the beginning, in the years 1930, the trade of the ice in the street was difficult. The ice was consumed between two gaufrettes. The Gomez brothers had the idea to either simply flat make the paste with waffle but in the shape of cone. This cone initially was rolled, then moulded. In same time, they repurchase the Brevet of an inventor of the contest Lépine: the spoon with ice. This spoon provided with a half-sphere makes it possible to form the ball of ice, it is also provided with a lever actuated by the inch which allows the easy release from the mould of the ball. In the same years, with Saint-Dizier, two other Spanish, the Ortiz brothers, create on the same crenel of the Ice cream, the company Miko.

The waffle

It is a simple paste containing flour of corn, sweetens, butter, egg yolk. To give rigidity to this kind of Crepe, it is run in a box mould. If the boxes are large (more than 1 cm), it is a waffle, if the boxes is fine (less than 7 mm) it is a gaufrette, with its derivatives: évantails (folded paste), cigarettes (rolled paste), drinking cups (pressed paste)…
