The citron is a Agrume. It is the fruit of the citron tree, a tree of the family of the Rutacées.
Near to the Lemon-yellow, the citron is an oval and warted fruit which can measure up to 25 cm length and weigh 4 kg. Its green or yellowish flesh is acid and not very juicy, but its odor is very pleasant.
Too much bitter, the citron is seldom used fresh. It especially is sold crystallized and used in pastry making, confectionery or at decorative ends. It is also transformed into jam and liquors. The peels of barks are employed in industrial pastry making.
The citron tree ( Citrus medica ) is a species close to the lemon tree. Originating in Asia of South-east and more precisely in India, the citron is the first citrus fruits to be diffused in the whole of the areas of Asia, then of the Europe as of IIIe century before Jesus-Christ.
It is cultivated intensively in Corsica and with the Morocco. It pushes there in Verger S in terrace, protected from the wind by hedges to prevent that the fruit is damaged by the spines of the branches. Harvest is carried out between September and November.

The citron of variety Etrog is one of the Four species used during the Jewish holiday of Souccot. It could also be the forbidden fruit of the Jardin of Eden: it was called Pomme of Médie by Alexandre Large the which introduced it with the the Middle East.
