Tarator

The tarator (Bulgarian: таратор, Macedonian: таратур) is a cold soup (or liquid salad) very appreciated in summer, which is consumed in Bulgaria. It is prepared starting from Yaourt, Concombre S, garlic, Noix, dill, plant oil and Eau. It can be been useful with ice floes. Local alternatives replaces the Yaourt by Eau and Vinaigre, omit the Noix but add Pain. Others very rare alternatives replace the Concombre S by Laitue or Carotte S.

The tarator is consumed either like a soup before the principal dish, or like a salad in accompaniment of the principal dish.

Receipt

To cut or grate a Cucumber of small pieces. To dilute the 500g Yoghourt in approximately 30 Cl of Water. To grate the garlic, the Nut and the dill, and to mix the whole. To add salt, oil and the vinegar according to your taste.
