Sunflower oil
The sunflower oil is a vegetable Huile obtained starting from seeds of Tournesol.
Composition
It is made up to triester 98% of fatty-acids. The remainder containing inter alia sterols and Tocopherol (vitamin E).The composition in fatty-acids of the sunflower oil used for the human consumption is the following one (mass expressed as a percentage):
- Linoleic acid (C18: 2 ω-6 polyinsaturé): 67% oleic
- Acid (C18: 1 ω-9 monoinsaturé): 20%
- Palmitic acid (C16: 0 saturated): 6%
- Stearic acid (C18: 0 saturated): 5%
- Others: 2%
The sunflower oil is thus the plant oil richest in essential fatty-acid omega-6. One notes his poverty in essential fatty-acid however omega-3.
