Sulphite
The sulphites are chemical compounds containing the ion sulphites S O 32-. As example, representation opposite of magnesium sulphite.
Use
Sulphites are used as a preserving S in the Vin S, certain pasta products, the dried Potatoes the dry, Fruit S or in gherkins out of bottles to prevent the Oxydation.
Allergic reactions
Approximately 5% of the asthmatic have difficulties in breathe in the minutes following their consumption. The risks of reaction to sulphites are also very important for the people allergic to the aspirine. These reactions can be fatal and require immediate care with the urgencies. These reactions are characterized by sneeze S, a swelling of the throat and Urticaire (see Anaphylaxie). The people who risk the allergy to sulphites must thus absolutely avoid them.
Presence of sulphites
The sulphites are present in almost all the Vin S. In larger quantity in the white wines of type marrowy or medium dry, a little less in the dry white and even less in the reds. In France, the bottles labelled starting from November 25th, 2005 must mention the presence of sulphites if the content sulphites is higher than 10 mg/liter. The wines worked out starting from grapes cultivated in organic farming contain also sulphites but in smaller quantity, however the majority of the current Bière S do not contain any more. Even if the Crevette S can also be treated with sulphites, it is not made by it mention on the label. In 1985, the American federal government prohibited the sulphite addition to the majority of the fresh fruit and vegetables, except for potatoes and of the dry fruits. In Europe, the declaration of the presence of sulphites as an allergen in food is obligatory as soon as their concentration reached 10 mg/kg or 10 mg/liter.
Description
In solution, the ions sulphites S O 32- can be highlighted with any acid H + and it occurs a gaseous emission of Sulfur dioxide S O 2 and this solution causes a discoloration of the Permanganate.
