Subdued
The subdued is a Infusion consumed in South America, in Argentine, with the Chile, the Paraguay, in Uruguay, in the south of the Brésil, and with the Lebanon and in Syria in the Middle-East. It is a very significant part of the culture, and it is normal in these areas to see people drinking subdued the in the street, respecting a traditional ritual.
The plant used, the Yerba subdued ( Ilex paraguariensis ), sometimes called “the of Paraguay”, “the of the Jesuits” or “the of Brazil”, are a South American species kind Ilex (like the houx) and whose sheets, which one torrefies and pulverizes, provide, infused in warm water, a stimulative drink, with the effects similar to those of the Café or The.
The subdued word comes from the Quechua mathi , which indicates a kind of Calebasse, container traditionally used to drink subdued and still used nowadays. Preparation of subdued
The method of preparation of subdued varies from one area to the other, and as for knowing which of all the existing methods makes it possible to obtain best the Infusion, the debate is far from being closed. However, certain elements are common to almost all the methods: one stuffs the Calebasse of a great quantity of yerba (grass, or plants) before adding very hot water to it (in general 70 to 80 °C, the ebullient water or which boiled is to be proscribed).
Placement of grass
The most current method consists in laying out carefully grass in the Calebasse before adding warm water to it. According to this method, the water-bottle is first of all filled with grass to half or the three-quarters. This operation makes it possible grass to continue to settle inside the water-bottle, so that not only the finest particles are close to the opening, but grass répend also in layers along a side, the largest stems and other elements forming a separation between the empty space on a side of the water-bottle and the grass cluster deposited in skew on other side.

To humidify grass by pouring cool water in empty space until in top of the water-bottle and until its absorption by grass before the insertion of the bombilla, makes it possible to the preparer to work and “to stuff” the grass wall with the filter end of the bombilla, which makes more resistant and solid the overall shape of grass inside the water-bottle. On the other hand, the dry grass allows a clearer and easier insertion of the bombilla, although it is necessary to take care not to deteriorate the placement of grass too much. The bombilla is inserted in skew more or less perpendicular to the wall where the grass is, so that its filter end moves in the major part of grass and comes to be put close or against the other wall of the water-bottle.
Infusion and consumption
The grass can be infused. If the bombilla were inserted in dry grass, the water-bottle must be filled of cool water once as indicated above until complete absorption (this operation does not last in general more than two to three minutes). It is essential to treat grass with cool water before adding warm water to avoid scalding the plant and causing a chemical decomposition of some of its Nutriment S with the beneficial properties. Maintenance
One of the most important points in the consumption of subdued is the Propreté. Once consumption is finished, it is imperative to clean as fast as possible subdued as well as the bombilla. In Bolivia and with the Peru, the word " maté" indicate any infusion of plants, like the Coke ( Erythroxylum Coke ), the Camomille or the Anis. For example, the Tri-subdued (or " very matés") is a mixture of the three plants quoted above.
Effects on health
