Preparation of subdued

The method of preparation of subdued varies from one area to the other, and as for knowing which of all the existing methods makes it possible to obtain best the Infusion, the debate is far from being closed. However, certain elements are common to almost all the methods: one stuffs the Calebasse of a great quantity of yerba (grass, or plants) before adding very hot water to it (in general 70 to 80 °C, the ebullient water or which boiled is to be proscribed).

Placement of grass

The most current method consists in laying out carefully grass in the Calebasse before adding warm water to it. According to this method, the water-bottle is first of all filled with grass to half or the three-quarters. After this operation, it is possible to add other plants to the healing virtues or gustatory qualities - a very current practice in Paraguay, where one can get plants near the " yuyera" local (Herb trade), subdued being used as basic ingredient entering the composition of infusions of plants. Once the water-bottle filled, the Coutûme wants that the preparer seizes it with full hand, while covering and by summarily stopping the opening with the palm of his hand. Then the water-bottle is briefly turned over and shaken vigorously, but (and with a gradually decreasing intensity) in this reversed position, in such way that the finest particles and most powdery of grass form a deposit close to the palm of the hand of the preparer and in the upper part of the water-bottle.

Once the grass settled, the water-bottle is put in a more or less oblique position, the opening inclined in light heightening compared to the base, before being again shaken, but this time gently and only according to one side movement. This operation makes it possible grass to continue to settle inside the water-bottle, so that not only the finest particles are close to the opening, but grass répend also in layers along a side, the largest stems and other elements forming a separation between the empty space on a side of the water-bottle and the grass cluster deposited in skew on other side.

Once the grass placed along a paroie of the water-bottle, this one is given on its basis, to avoid to the maximum disturbing still the provision of grass inside, because it is reorientated to allow consumption. It is important that the grass cluster in skew remains in this position, with its powdery end always punt and with maximum height of the water-bottle, at least partly, whereas the layer of stems present on along the wall slips downwards and accumulates in the part previously empties contrary to the place where the grass is (although a part should remain in place).

All this operation consisting in laying out grass knowingly has as main aim to make sure that subdued which will be drunk later on by means of the bombilla contains less particles possible (the finest particles must be as distant as possible from the filter end of the bombilla), for a good circulation of subdued. The particles of bigger size and the stems in particular also help with the process of filtration which occurs with each time one exerts an aspiration on the bombilla. Moreover, the tilted provision also guarantees a concentration and a taste appropriate and consistent to each filling of the water-bottle, which multiplies the number of times where it can be filled.

Insertion of the bombilla

One can then insert the bombilla in the Calebasse. Many are those which choose to pour cool water in the water-bottle before inserting the bombilla, while others recommend to directly insert the bombilla in dry grass. To humidify grass by pouring cool water in empty space until in top of the water-bottle and until its absorption by grass before the insertion of the bombilla, makes it possible to the preparer to work and “to stuff” the grass wall with the filter end of the bombilla, which makes more resistant and solid the overall shape of grass inside the water-bottle. On the other hand, the dry grass allows a clearer and easier insertion of the bombilla, although it is necessary to take care not to deteriorate the placement of grass too much. This decision is a question preferably personal or cultural. The bombilla is inserted in skew more or less perpendicular to the wall where the grass is, so that its filter end moves in the major part of grass and comes to be put close or against the other wall of the water-bottle.

Infusion and consumption

The grass can be infused. If the bombilla were inserted in dry grass, the water-bottle must be filled of cool water once as indicated above until complete absorption (this operation does not last in general more than two to three minutes). It is essential to treat grass with cool water before adding warm water to avoid scalding the plant and causing a chemical decomposition of some of its Nutriment S with the beneficial properties. The warm water can then be added; it is enough to pour it like cool water poured previously, in the cavity opposed to the place where the grass is, almost until in top of the Calebasse and until complete Saturation of grass. It is necessary to take care to keep dry the inflated top of the yerba beside the edge of the water-bottle.

Once the added warm water, subdued can be drunk and one can still fill the water-bottle with many times before it “wears” and loses its taste. In such a case, the grass cluster can be put on side on a wall of the water-bottle, which makes it possible to add water along the other wall - that revives subdued and has the advantage of being able to carry out new fillings. Maintenance

One of the most important points in the consumption of subdued is the Propreté. Once consumption is finished, it is imperative to clean as fast as possible subdued as well as the bombilla. The residues of subdued (plant) remaining in subdued (container) is wet and that supports the mould, the water-bottle being very absorbing, it is thereafter very difficult to erase the back taste which results from it.

To clean subdued it is enough to empty it and to rinse it with clear water. The use of product of crockery is strongly disadvised. Then, it is enough to let dry with the free air (with the sun preferably). If subdued is arranged without being completely dry, it can take a taste of rancid .

The bombilla is cleaned in the same way with clear water and without product and must also be perfectly dry before the arrangement (especially those done out of oxydable matters) .bonjkour

Alternatives

In Bolivia and with the Peru, the word " maté" indicate any infusion of plants, like the Coke ( Erythroxylum Coke ), the Camomille or the Anis. For example, the Tri-subdued (or " very matés") is a mixture of the three plants quoted above.

Effects on health

Research in-vivo and -vitro watch which the plant of subdued has an important effect against cancer. Researchers of the university of Illinois (2005) show that the plant of subdued is " rich person in components phénoliques" and that it has the property d'" to prevent the proliferation of the oral cells cancerigènes".

A study made by the international agency of research of cancer shows a correlation limited between cancer oral and the fact of drinking the subdued hot one. By taking account of other factors such as the temperature of water and the various practices of the consumers, the concluded study that subdued the " cannot be classified like carcinogen for the humains."
