Its Sheet S, smooth or blighted, is of a dark green.

The legend of iron

Contrary to a tough legend (illustrated in the adventures of Popeye), the spinach is not the best source of food iron. This legend was born from the typing error of an American secretary. This error, which multiplied by ten the food iron rate contained in the plant, passed unperceived during tens of years. The dry meat and vegetables do much better than spinaches, too often badly prepareds and of this fact little appreciated of the children.

The iron of spinaches is absorbed much better by the body when accompanied by a source of vitamin C, such as for example with lemon juice. A beautiful spinach salad nutritive often known in the vegetarian medium is that of spinaches with tangerines or clementines.

The spinach is on the other hand one of the best known sources of Vitamine B9 or folic acid. The consumption of a sufficient quantity of folic acid at any beginning of Grossesse makes it possible to strongly decrease the incidence of the Spina bifida, a serious malformation of straws. The young women should thus eat spinaches regularly, when they plan to have a baby.
