Soup with shallot of Avranches
The soup with shallot of Avranches is a culinary speciality of Normandy.
They are 10 shallot S chopped and 3 potatoes cut in small dice returned in Beurre to which one adds 1 spoonful of Farine, Poivre and salt before wetting water and to let cook from 25 to 30 minutes. Once cooked, a little fresh Cream watered in a little bubble is added to the soup which is been useful quite hot versed on croûtons.
