Slow sugar

A slow sugar is a sugar having a Index glycemic lower than 55.

The Glucide S are indeed classified according to their glycémiant capacity, i.e. their action on the Glycémie (rate of glucose in blood).

Slow sugars are generally complex sugars or Polysaccharide, but not necessarily. The Fructose is a simple Sucre but is also a slow sugar, its index glycemic being lower than 55.
