Chimay (in Walloon Chimai ) is a French-speaking city of Belgium located in Walloon region in the Province of Hainaut.
Chimay is located on the calcareous Tape of the Calestienne. They are grounds favourable with the culture, cleared early, well before the monastic time. Chimay is indeed located in a large clearing, opened in the of the Ardennes Forêt.
More in the south, the clearing was increased at the time monastic, towards the poorer grounds of the northern repercussion of the plate of Rocroi; These grounds were especially reserved for the breeding and poor cultures, like rye. With XVIIIe and XIXe centuries, farms created by individual contractors continued these clearings, encouraged by the State.
Located in the administrative district of Thuin, it was born from the fusion of 14 old communes, on January 1st, 1977.
In 2003, Chimay counted 9.871 inhabitants.
The city shelters the castle of princes de Chimay and collegial Saints Pierre and Paul. Not far from there the lake of Virelles is, of a great ornithological interest. But Chimay is mainly known thanks to the Abbaye Notre-Dame de Scourmont, near (with Forges), where monks cistercians Trappists manufacture Bière and Fromage S.
The beer of Chimay, red, blue or triple is obtained by a process of high Fermentation (with more than 20 °C) and undergoes the one second fermentation out of bottle. It is not pasteurized.
Chimay is twinned with Conflans-Holy-Honorine (France) which is located at the confluence of the Oise, river whose source is in Chimay. The river of the White Eau also takes its source with Chimay.
