Samoussa

The Samoussa , or Sambossa , or Samsa is a kind of snack originating in the India of the Northern . Of triangular form , it is a Beignet composed of a fine paste of Blé which coats a joke made with Légume S or Viande, of Piment and spice S, in particular the Coriandre and the Curcuma.

Known until in Ouzbékistan where it bears the name of somsa , this small triangular fritter essaimé on all the Eastern shores of the Indian Ocean, thanks to the expatriation of Indian workers as of the 19th century. One thus finds it with the Mauritius (Samoossa), with Madagascar or the the Comoros (Sambos).

It was of course adapted to the local culinary practices. So much so that with the Meeting, where it is also present, the samoussa with the Fromage competition from now on samoussas with the meat. Its receipt was elaborate in the Années 1990 by a specialist in Saint-Denis which proposes also alternatives with the Requin or the Ananas, inter alia.

To the Portugal, it bears the name of chamuça .
