Saloio
The Saloio is a Portuguese cheese, manufactured in the area ranging between Lisbon and Sintra.
It is a small fresh cheese ewe's milk with paste fresh without salt, firm, always been used in the forms (cinchos) cylindrical which are used for manufacture, 5 cm diameter on 6 cm as top.
This cheese is consumed readily in entry, with a little salt, but in the restaurants of Lisbon it is been useful like “cocktail snack”.
Formerly, the farm ones made door-to-door, to propose their production presented in pretty cane baskets to double lid to reductions.
