The Salers is a Liqueur of roots of Gentiane of Auvergne, manufactured since 1885 per Ambroise Labounoux then by his son Alfred Labounoux, and marketed by the Distilling of Salers.
Name being reproduced on the labels is “Salers Gentiane”, but current designation is “ Salers”.
Distilling is located at Montaignac Saint Hippolyte (Corrèze). Its “leading product” is the Salers Gentian, of which the basic ingredient is the yellow root of Gentiane ( gentiana lutea ) which confers its quite specific bitterness to him. One finds this plant in important quantities in the area of the Puy Mary, near the town of Salers (Cantal). It is around the village of Salers that the Labounoux family approvisonnait of roots of Gentian, and this is why this aperitif was baptized Salers. The roots used today always come from Auvergne.
Salers exists in three proportionings and presentations:
Salers with 16% and 20% are usually consumed with the Apéritif. They are drunk, pure on ice, added with cream of Blackcurrant, syrup of Violet, orange juice and are also used for to bring the note of bitterness " Bitter" in many cocktails.
Salers with 25% is more elaborate. The final assembly, in which one finds citrus fruits notes, red fruits, of cocoa, is less bitter. It is thus the means of more easily approaching the bitterness of the Gentian. It for example will be more readily consumed on ice after the meal.
