Salad inhabitant of Li2ege, or Potful inhabitant of Li2ege
It is a dish which is often used as single dish, this salad tastes tepid
Ingredients
for 4 people- 1 kg of Bean S fine princesses (preferably) or French beans
- 1 kg of new Potatoes (rattes preferably)
- 250 gr. of Bacon smoked
- 3 Onion S white
- a handle of Parsley
- 1 pod of garlic
- of the Vinegar
Preparation
To make cook potatoes lines some (without peeling them), in salt water, separately to make cook beans in salt water, but not too, they must be fermes.To drain beans and to put them in a large rubbed garlic salad bowl, to add to it the potatoes which one will have peeled and crossed in rondelles.
To make return the bacon which one will have cut out of dice, to add it to the mixture précédent.
To strew with chopped parsley and onions cut out of discs fines.
(Alternative 1: to thicken sauce with 2 spoons of maïzena)
(Alternative 2: one can also make bleach onions in the fat of bacon, before adding them to the mixture.)
To thaw the stove with Vinegar, to let reduce 2 to 3 minutes, to pour the hot vinegar in the salad bowl, to salt, pepper, and well to mix the ingredients.

Let us note that there exist at least two salads inhabitants of Li2ege, the left bank and the bank droite.Let us note that certain families of Liege do not put onions (bank right-hand sides) and just of the fresh cream and eggs at the receipt.
One can replace Rattes of Touquet by potatoes of origin: horns of goats ( kwèn' di gattes ).
This salad inhabitant of Li2ege is sometimes been used in accompaniment of a kidney of calf, spirlingue or as roasted sausages, but it is generally enough with has itself.
The inhabitant of Li2ege is also a delight to serve cold the following day whereas all the ingredients absorbed sauce well.
