The Couteau Sabatier was born in the basin from Thiers at the beginning of the XIXe century. In 1810 already, there existed several marks with the name Sabatier.
Two large family S forged the reputation of the Sabatier knives: Sabatier of Moutier (low City of Thiers) and Sabatier de Bellevue (high City of Thiers). Nowadays, only the family Sabatier de Bellevue or Sabatier-k remains, always with the same address. It continues to manufacture since 8 generations of the kitchen knifes high-of-range under company name: Ets Sabatier Elder and Perrier.
The Sabatier mark is a mark considered in the world of the cutlery and in the large Chief cooks. It appeared before the French legislation concerning the trade-mark law.
