Rougail

The rougail is the essential condiment to accompany the Carry with the Réunion.
Very spiced, it is composed traditionally of tomatos cut in small dice, of Gingembre crushed, onion thin slices and Piments Martin. Combava or Caloupilé can be added there.
But there exist alternatives like the rougail zavoca containing lawyers or the rougail mango containing green mangos.
One should not integrate into this list the rougail sausage which is him a dish approaching the Carri.
