Ripasso

Name Ripasso , associated with the wine Valpolicella, indicates a refermentation of the Vin on dregs of Amarone. This process gives more character and body to the wine and raises its alcoholic strength.

This technique was introduced by the Masi producer. After a long quarrel on the copyright of this name, an agreement in 2006 was found between the producer and the Consortium for the Supervision of the Valpolicella Wines. The property is transferred to the chamber of commerce from Vérone.

This process is used now in other areas of Italy.
