Right of the Foot fork

In France, under the Old Mode, the right of the foot fork is a tax of assistances on the Viande due to the King.

This fee is charged on the bovines, the sheep and the porcine ones, in Paris, in Rouen and in other cities.

  • In 1680, it is of 3 books 4 grounds for an ox, 3 books per pig, 1 book 12 grounds per calf, 7 pennies 6 sums of money by sheep.

  • In 1780, they is respectively 20 books, 7 books 6 grounds, 5 books 1 penny and 36 grounds.

This right is leased by the general Ferme for the three quarters, the remainder is versed with the Town hall and the hospitals.
