Rice pudding

A rice pudding is a Aliment containing Riz. There exists in several versions.

In North America, rice puddings are sold like good food for the Santé. In Asia, one finds more traditional versions.

Ingredients

Receipt for 6 people:
  • 300 G of rice
  • 3/4 semi-skimmed milk L
  • 1 vanilla pod
  • 3 eggs
  • 150 G of caster sugar for the cake
  • 90 G of caster sugar for the caramel

Preparation

In a pan, make bleach rice in a great volume of ebullient water during 4 min. Égouttez it and rinse it with clear water. Put milk in a pan. Split the vanilla pod of them two. Scrape the grains and mix them with milk with the vanilla pod. Pour rice and make cook with soft fire during 30 min. Surveillez the last minutes of cooking. Rice finishes cooking well by absorbing milk.

In a bowl, mix eggs and 150 G of sugar. Add still hot rice gradually. Prepare a caramel with 60 G of caster sugar. Nappez the edge of a blank or Charlotte mould and pour the remainder at the bottom of the mould. Pour rice in the mould and make cook with the furnace with the bain-marie during 30 to 35 min with 180 °C. Leave the furnace and let warm at least 10 min before unmoulding. Taste it still tepid or cold.
