Refining

The refining is the period of maturation during which the Fromage receives many care in cellar. The longer the period of maturation is, the more the cheese will be vigorous.
The care taken to its crust will influence its character. There exists a great difference in taste between a cheese whose crust was left dry and another whose crust was regularly humidified.

a cheese is known as fresh when it has just been manufactured and enters or could enter in refining.
- a cheese is known as refined when it reached its optimal maturation at the end of its period of refining (very variable according to cheeses and the periods of the year).
Refining is also the metallurgical process which consists starting from a material at the end of the lifetime, and to give again to him by various techniques of the properties which make it suited to a new use (example: refining of aluminum).
