Reassembly

The reassembly is the action to go up the juice of Raisin (or Moût) in Fermentation on the hat of marc (left solid the Vendange present in the tank) using a pump.

The principal goal of the reassembly is to primarily extract as well as possible the interesting molecules from the grapes (Tanin S, precursors of flavors, coloring molecules), present in the first layers of cells of the grape skins.

The hat which contains these skins of grapes having naturally gone up to the top of the tank at the beginning of fermentation, without reassembly, only a small portion of the grapes would touch this must. The homogenization thus increases this exchange. Moreover the reassembly allows to wet the hat with juice alcoholic and charged in CO2 and thus to protect this hat from the Oxydation and attacks with micro-organisms Aérobie S.
