Ravioli
The ravioli are a type of stuffed pastes, Italian speciality or niçoise, of Chinese origin, In France, when they are named Raviole S, they are those stuffed with cheese, manufactured in Drome and Isere.
The Chinese make ravioli which they call Jiaozi (饺子) since centuries, the technique was undoubtedly brought in Europe by the Italians, at the same moment as the Nouilles (Spaghetti in Italian), and the other pasta products.
The ravioli can be stuffed with the Légume S or the Viande or both, but also with the Fromage. There can be as many receipts as craftsmen who make them. In the receipt niçoise, the joke is traditionally made up of a mixture of stew (beef) and of blettes finely chopped.

The word comes from Italian raviolo ( ravioli in the plural), form which can be used. Two plural forms are accepted by certain works, ravioli and raviolis , but the second is faulty étymologiquement.
