Rösti

The rösti or rœsti (plural male name) are wafers of potatoes, typically Suisse. The word decides reuchti . It would act in the beginning of a dish prepared for the Petit-déjeuner by the peasants Bernese, perhaps inspired by a dish of roast potatoes appeared at the 19th century in the area inhabitant of Zurich. Nowadays they are rather been useful like vegetable (for example with the famous 3eminc3e of veal to the inhabitant of Zurich) or as the flat main thing if they are decorated of bacon (rösti with Bernese) or of cheese. In the beginning, the wafers were roast with Saindoux, but it was gradually replaced by Huile, like that of sunflower. There exist very many traditional unquestionable alternatives, others more original.

Speciality originating in the German-speaking Switzerland, the rösti gave their name to the “barrier of rösti” or röstigraben (literally “ditch of rösti”) which would mark the difference in mentality between the French-speaking Switzerland and the German-speaking Switzerland . One speaks in particular about the Röstigraben when a federal voting obtains very different results in the areas French-speaking person and German-speaking.

The wafers are called Criques in France, in particular in south-east.

One finds now in the supermarkets of the prepared and packed rösti vacuum.
