The name would derive from German " Kuchen" (cake) or of the Lorraine patois Francique " Küchen".

Composition of the quiche

The original composition of the quiche is that of the Lorraine quiche.

According to the Lorraine tradition , a Quiche is a salted Tarte made up of a broken Pâte furnished with a Appareil, called Migaine, and of smoked plugs. The migaine consists of egg S and fresh Cream.

Two alternatives of the Lorraine quiche exist. One speaks about Vosgean quiche when the trimming is added with cheese, and Alsatian quiche when it is added with onions rissoles.
