Pulque

The pulque is a traditional drink Aztèque resulting from fermentation partial of the sap of the maguey or sisal plant pulquero.
The consumption of pulque gradually decreased with the Mexico during the appearance of beer. Thus, the Mexican capital counts nothing any more but some " pulquerias". It is still manufactured in a traditional way in the valley of Mexico City, and in the arid regions of the states of Jalisco and Puebla.
The Side of Pulque , a brioche fourée of pulque, is a speciality of Saltillo, State de Coahuila.
