Polydextrose

The polydextrose is synthesized starting from the 9 molecules of Dextrose (glucose), a molecule of sorbitol with 2 acid catalysts: acid citric and acid phosphoric. Its degree of polymerization is of 12 and its molecular weight of 1500 Da. It is authorized in France as an additive like " agent of charge". Very resistant to intestinal digestion, it behaves like a fiber. It thus allows in food reduced out of sugars, to bring " charge" , without increasing the energy value.
