The pleurote of the panicaut ( Pleurotus eryngii ) is a Champignon Basidiomycète of Pleurotacée S.
Its name (Latin and French) comes from the Ombellifère S of the kind Eryngium to which it is pledged.
Description
- Hat 5 to 8 cm, convex then levelled with depressed, brown-beige, streaked small radial lines; margin rolled up.
- white, not very tight, unequal Blades ; sporée white.
- Foot 4 to 6 cm, thick, often (but not always) excentré.
- Flesh thick, firm, white; low odor , soft savor .
It is about a very polymorphic species being able to take the aspect of a language, commun run at the
Pleurote S, or on the contrary that of a Tricholome.
Ecology
Rather southernmost, this pleurote pushes in ground released on the roots of the panicauts, false Chardon S of the Eryngium kind, in particular on the
pastoral Panicaut and the
maritime Panicaut.
Edibility
The pleurote of the panicaut, called " argouane" in certain areas, is excellent edible. Its culture was undertaken, but on a less scale than
Pleurotus ostreatus .
Production
The farming technique of the pleurote of the panicaut (at Champigourmet, Switzerland) resembles that of the
Grifola . The substrate is of vegetable origin and one distinguishes a phase from incubation and a phase of fructification. During the first phase the mycelium will invade the substrate and during the second the carpophore develops. The climatic conditions (moisture of the air, temperature and CO2) are severely controlled.
Cook
Receipt for 4 people: 1) to make return a shallot chopped in butter 2) to add 500 gr. of pleurotes émincées and to make them return during approximately 15 minutes 3) to add fresh grasses (parsley, chive or basil) 4) to season with salt and pepper 5) to add cream.
This preparation lends itself to being been useful with rice, pastes or toasts. It can also accompany by fish or the meat or replace a vegetable.
Species close and risks to confusion
There exists a variety
ferulae , larger, pushing on the roots of the canes, others pushing on the
Laserpitium.
It hardly presents risk of confusion, because of its strict dependence of the panicaut or of these others ombellifères.
