A plate of furnace is a Plaque of Tôle which is used for the Cuisson of the food in a Four.

Held by grooves on the sides, it slips horizontally into the furnace. One furnishes it with Papier sulphurized or aluminum to make there cook Pâtisserie S: pastry makings in circles, Meringue S or pastry makings flat (languages of cat, etc). Heated dry, it can be useful has to roast the Viande in sections (Pierrade, plancha).
