Sole is a term which indicates a great number of fish S pertaining to the order of flat fish (Pleuronectiformes) and of the Soléidé S ( Soleidae ).
Most widespread is the common plate ( Solea solea ), that one finds it on coastal water of all the Europe. It reproduces in the North Sea of April to August. Characterized by a dissymmetry by side diminution, the plate merges with the ground and moving while undulating. The plate is nourished of worms, of Mollusque S and of small Poisson S. His size ranges between 20 and 35 cm, it can adapt its color to that of the bottom.
The plate is fished with the Chalut and the Trémail, and is very appreciated cooks for his fine and firm flesh.
It arrives sometimes, especially in the restoration, which are wrongly presented like plates of other fish to the less delicate flesh, like the Limande or the tropical Sole.
