Peptone
The word peptone in general indicates the product of a reaction of protein hydrolysis. This hydrolysis can be chemical (acid hydrolysis) or enzymatic. The rate of hydrolysis depends on the substrates, the hydrolizing agents and the operating conditions. These hydrolyzes are not controlled, also these reactions produce molecular species whose sizes only vary amino-acid to peptides of several ten amino-acids.
The industrial applications of peptones are multiple: culture media for microbiology, it cosmetic, the agroalimentary one, animal nutrition…
One distinguishes 3 types of raw materials for the manufacture of peptones: - animal origin (bodies, muscles,…) - dairy origin (acid casein, whey,…) - vegetable origin (Soya, Cotton, Corn, Broad bean, Corn,…)
They bring in the middle of culture of the Amino-acid , of the Peptide S (source of energy, of Carbone, Azote) mainly.
