Paris-Brest

The bet-Brest is a pastry making, in the shape of crown, made up of a Chou pastry and of a cream to butter praline-flavoured ice cream, furnished with spilt almonds. It is a pastrycook of Basse-Normandie, inspired by the cycle race between Paris-Brest-Paris, at the end of the 19th century, which is at the origin of the cake in 1891.
The form of the bet-Brest is besides supposed to represent a wheel of Bicyclette in reference to the cycle race.
