Pétafine

The pétafine is the traditional name d´un flat Dauphiné which is presented in the form d´une cream manufactured containing remainders of Fromage S and d´ Eau-de-vie.

There does not exist a single receipt and its composition is variable, but generally includes/understands cheese remainders, brandy, Vinaigre and garlic. The ingredients are mixed, kneaded, then age some time. The preparation is then consumed in Tartine.

In Drome and Ardeche, the pétafine is generally called “foujou”. In these department, the maturation of cheese can last up to one year. The preparation is sometimes been useful mixed with fresh cheese, on broad farmhouse bread sections.
