Bœuf - Latin boss , bovis - is the vernacular Nom Boviné of the Espèce Bos taurus . As for the others bovinés, the male is commonly called Taureau , the female, Vache , and the small one, Veau . That which kept oxen was the herdsman.

One uses also the word ox to indicate one bovidé male castrated, generally high for the production of Viande, but also for his Draft animal work like .

The term extends to the Viande from any specimen from the species Bos taurus (ox, cow, bull, bull calf, heifer).
