Ossau-Iraty
The Ossau-Iraty is a Fromage French Basque Country and Béarn, produced on a well delimited soil, within the department of the Yrénées-Atlantiques and a small portion of the department of the Hautes-Pyrénées. It profits from a AOC since 1980 and from a European recognition in AOP. Its name comes from the Pic of the South of Ossau which overhangs the valley of Ossau and all Béarn, and of the Forêt of Iraty, which is largest hêtraie of Europe, with horse on the Basque mountains, Frenchwoman and Spanish.
It is a cheese containing ewe's milk of races Manech and Basco-inhabitant of Béarn S, with not cooked pressed paste, of a weight of 2 - 3 kg for the small size, 4 - 5 up to 7 kg for the large format. Its crust has a color going from the orange yellow to the ashy gray.
The schedule of conditions is defined by a decree which specified mode of breeding (extensive), the food of the ewes, seasonal variation. The manufacture of cheese is described, with the whole of the stages and the authorized practices.
Its manufacture is seasonal: the ewes give milk only from November to July, sometimes August. Its period of optimal tasting is spread out June at November after a Affinage from 4 to 6 months, but it is also excellent from May to December. It has a beautiful paste ivory which contains exceptional savors.
The die includes/understands 1.700 milk producers of which a hundred farm manufacturers, a dozen co-operatives and dairies artisanal or industrial. The Production is of 1.966 tons in 1998 (- 4,95% since 1996) including 8% as a farmer; nearly 3.200 tons in 2004.
