Olivier castle

The castle Olivier , is a wine field of 220 ha located at Léognan in the Gironde. Located in AOC Pessac-Léognan, it is classified great wine in the Classement of the Low register wines.

History of the field

The soil

The vineyard of 50 ha (38 ha red, and 12 ha white) is of only one holding on a ground of low registers günziennes and argilo-limestones. Encépagement of the red wines is composed to 45% of Merlot, 45% of Cabernet-sauvignon and 10% frank Cabernet. That of the white wines is to 55% of Sémillon, 40% of Sauvignon and 5% of Muscadelle. The Middle Age of the vines is 25 years for the reds and 40 years for the white. They are planted with a strong density going from 8000 to 10000 pieds/ha.

Wine

The vineyard is vinified to 75% in reds and 25% in white.

The Olivier castle produces a second wine the Seigneurie of Olivier .
