Olivier Roellinger
Olivier Roellinger (born with Cancale the September 14th 1955) is large a Cuisinier French.
In 1976, whereas it was student in Math sup, it is attacked with iron change of course, then left for death. After several week of coma, there remain two years in convalescence, and start to cook “to crunch the life”. In 1982 it creates a table of host in the family residence (a Malouinière naming " House of Bricourt" with Cancale). It combines local ingredients and spice S, pointing out the bond of Saint-Malo with the road of the Indies. Its Saint-stone “return of the Indies” makes its reputation. It obtains its first star with the Guide Michelin in 1984, and the second in 1988. In 2006, it is only promoted with third star. With Michel Bras or Pierre Gagnaire, it became one of the largest representatives of the contemporary French kitchen, and a recognized promoter of the culinary interbreeding.
