Naan

The naan is a flat Pain, fact of Flour of corn and generally without Levure, of everyday consumption in several areas of Central Asia and South Asia: Afghanistan, Iran, Ouzbékistan, Burma, Pakistan and India of the North-West (mainly in the the Rajasthan and the Gujarat).

The naan differs from the Chapati by its form (this last being round) and by the fact that the chapati is generally cooked on a cast iron plate called Tawa.

Receipt

The receipt which follows is a version adapted to the Western modes of kitchen.

Ingredients (for 6 people)

  • 300 G of natural Farine

  • 1 Yaourt
  • 1 Cuillère with coffee shaves salt
  • 1 half sachet of Levure of baker
  • 1 spoon with coffee of Sucre out of powder
  • 1 spoon with soup of Huile
  • 1 coffee cup of tepid water
  • (possibly some seeds of Cumin or Curry out of powder)

Preparation

In a little tepid water, to pour yeast and to add sugar. To let take 5 minutes.

To mix the flour with salt, oil and yoghourt. Then to pour the water mixture, sugar, yeast in the preparation.

To work the paste with a spoon (or the hands, but the paste is sticking) and to add to the need a little for water tepid in order to obtain a soft paste.

To let rest 15-20 minutes.

To spread out the paste in 6 shares and to flatten each share in a wafer as large as possible (approximately 0,5 cm height).

That must give white but slightly gilded wafers of Pain and punts with bumps by places.

To cook in a thick frying pan with anti-adhesive coating during 3 minutes on each side until the wafer is well inflated.

To taste this bread with Chicken Indian tandoori or other dishes (see for example the receipts of Radame or Tchanggy.

Alternative

the naan with the cheese

Even preparation, while adding to semi-cooking of the Gruyere grated on the naan. Some line the naan cheese spread of type Vache which laughs or of goat's milk cheese.
